I'm a poet / essayist / memoirist/
journalist (in the sense of keeping a journal, not of working for a newspaper) and it occurred to me that a blog fits in with all that. If Montaigne, father of the essay, were alive today, he'd keep a blog. This is my self-portrait as frustrated artist who can't believe she's not famous yet. (And because it's part of my artistic endeavor, the whole damn thing is copyrighted. All rights reserved.)

It's a Date

You know how people make yummy treats and share them at Christmas time? This recipe for date caramels was the best such treat I've encountered in a long, long time. I made a batch a few weeks ago and ate the whole thing myself--it stores well enough that you can do that, just eat all the candy yourself over a week or two.

In large saucepan, mix together

3/4 cups butter
2 eggs, lightly beaten
2 cups sugar
1 cup chopped dates

Bring to boil over medium heat. Reduce heat and cook ten minutes at low boil, stirring constantly to avoid scorching. Remove from heat and stir in

1 cup chopped pecans
1/2 cup coconut
1 tsp vanilla

Pour into buttered 9x9 glass baking dish. Sprinkle more coconut on top.

Who said anything about a WEEK OR TWO?? I'd be lucky to have any left over after day one. Sheesh.

Oh. Good. Lord. I don't normally like dates, but that sounds absolutely divine. Anything with butter and coconut and I'm hooked.

Well, OK, Sister Mary Lisa--I admit that it took less than a week for me to finish off the pan. But I didn't want to announce that right away and seem like a pathetic pig.

Janet, this really is good. I love dates--I like them raw, cooked, however--but since they're chopped to begin with and mixed in with a bunch of other things, the flavor of the dates is fairly delicate, while the overall flavor is just plain YUMMY.

Hi SML--it's one thing to say, "I don't make candy, because I know if I did, I'd finish it off in a day or two," because that at least implies that you know your weaknesses and are willing to circumvent them by removing the difficulty in the first place. Whereas it's another to say, "I do make candy, and then I eat it all, all by myself, pretty quickly," because that announces a voracious appetite for sweets.

Which I admit I have, but I feel kind of well, pathetic and piggish about it.

I came for a recipe (actually in the chocolate department but I'll take this above TOO!) and so leave you one. Here. The Recipe Swap column is several parts good, a couple parts unbelievably bad (did we really eat like that?) but mostly, useful and nostalgic. You know...enjoy.
